Start strong, finish stronger.
Breakfast, so it is said, is the most important meal of the day. It’s something I wholeheartedly agree with. So often breakfast is treated as an afterthought. A hasty bit of toast on the way out of the door. A cereal bar or piece of fruit on the way into work, or worse of all nothing until lunch.
It’s crucial to fuel you day. Start well. You don’t want to be playing catch up and feeling hungry and risk over-eating later in the day.
Treat breakfast like a main meal Give it the time and space it needs. Dammit the time it deserves. Take the time to prepare something and enjoy it, even if this means getting up earlier. Just 10 minutes crystallising your thoughts before the the hurly burly’s done before the battle’s lost and won, can be priceless.
So by way of a suggestion, here is my favourite breakfast.

Ingredients
1 Large Leek
Half a scotch bonnet chilli
Half a cup of frozen peas
Half a cup of frozen edamame beans
2 eggs
Tablespoon of olive oil
3 tablespoons of water
60g Smoked Salmon
Method
Cut the leek in half length-ways, then slice across the width to make semi-circles.
Slice the chilli into small thin slices.
Place leeks and chilli into a small frying pan.
Add 3 tablespoons of water and 1 tablespoon to the pan and stir it into the leek.
Add the peas and beans.
Cover the pans and cook at a relatively high heat for 3:30 minutes.
Stir through the leeks, peas and beans, then make 2 wells in the leeks.
Crack the eggs into the wells cover and poach for another about 3:00 depending on how you like your eggs.
Once the eggs are done, spoon the leaks, peas & beans into a bowl, stir in the smoked salmon, place the eggs on top and serve immediately.
